Rajasthani Cuisines

Royal kitchens of Rajasthan serves many delicious delicacies, that are highly nutritious. Rajasthanis are very fond of milk, butter and other milk products. The daily meal comprises unleavened bread, made of wheat, maize or barley.

Ker-Sangri - Bajara Roti
Crunchy Bajra Roti Ker Sangri, one of the popular delicacies of Rajasthan, is served hot with crunchy Bajra roti. It is prepared from tropical Rajasthani vegetables beans and capers. The cuisine is characterized with various ingredients like ker, sangri, khumbatiya, red chillie, dried mango pieces, cumin seeds, turmeric powder and coriander powder.

Rajasthani Dal-Bati-Churma
Dal-bati churama is popular all over the world for its great unique taste. It consists of three servings Dal, Bati and Churma. Dal is prepared from lentils. Bati is a baked wheat ball, stuffed with onions, peas and sattu and roasted among hot coals. Churma is a sweet dish prepared using flour, sugar and ghee, garnished with dry fruits.

Khud Khargosh
Lapsi RajasthanKhud Khargosh is scrumptious non-vegetarian dish prepared from the flesh of hare. The hare is skinned and is blended with spices, wrapped in dough and finally in layers of mud-soaked cloth. It is then cooked in a pit.

Laapsi
Lip-smacking cuisine of Royal state Laapsi, is served hot during the meal. Wheat germ (dalia), sugar, cardamom powder and ghee forms the main ingredients of the dish. Before serving it is garnished with chopped almonds and pistachios, which adds great taste to it.

Lal Maans (red meat) and Safed Maans (white meat)
Lal Maans (Red Meat) Lal Maans is a red meat of lamb, hen, goat etc. It is a delectable cuisine of Rajasthan, tastes too spicy with added flavor of red chillies. Safed Maans is a favorite dish for non-vegetarians, prepared with white mutton. Its curry is prepared from coconut, cashew nuts, almonds, white pepper and poppy seeds.

Sula
Sula refers to tender morsels of meat. The main ingredients of the dish are dry yogurt, garlic, coriander, red chilli, onions and kachri. Meat is marinated in the mixture of given ingredients and then grilled over hot coals.

Chutneys
Rajasthan food is spiced up with varieties of chutneys. Chutneys add flavor to the dish and makes it more interesting. These are prepared from locally available spices like turmeric, mint, coriander and garlic.
